But it can\u2019t be any old boiled white rice. It has to be arroz  blanco made with amor, sabor and spices. Expect to see it include powdered or fresh onion or garlic (or both), and a spoonful of the sauce connecting it to the rest of the plate. Like the stew la carne is cooked in or the savory jugo from the beans.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The best friend of rice, of course, is beans (be they rojo or black or pink or pinto or &#8230; just about any color will do). Honestamente, the variations of what to eat rice with are sin fin: Endless.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">For this 101 on how to make arroz blanco the authentic abuela way, we turn to one of our favorite cocineras from Venezuela, <strong><a href=\"https:\/\/familiakitchen.com\/?s=liliana\">Liliana Hernandez<\/a>, <\/strong>who regularly whips up dishes from her homeland on her <a href=\"https:\/\/www.youtube.com\/channel\/UCNxkWliBJCv8xgMKGGvMOXg\">Mi Show de Cocina YouTube channel<\/a>. Rice is a starring ingredient in her <a href=\"https:\/\/www.youtube.com\/watch?v=PULP3qTnt8o\">pabelll\u00f3n criollo,<\/a> Venezuela\u2019s national dish. Pabell\u00f3n is a heaping, hearty plate of shredded beef called <a href=\"https:\/\/familiakitchen.com\/my-classic-carne-mechada-for-arepas\/\">carne mechada<\/a>, fried ripe-plantain tajadas, and black beans in a garlic, cilantro, dried chile and piloncillo sauce\u2014all centered around a big scoop of fluffy, hot, white arroz.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">And if you run into rice cooking problems, check out our <a href=\"https:\/\/familiakitchen.com\/how-to-make-white-rice-perfect-every-time-no-more-soggy\/\">tips for making rice<\/a> that turns out perfectly every time. No more soggy rice!<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Rice is also found on Liliana\u2019s Illinois-home table for dinner on most non-pabell\u00f3n nights. La cocinera Venezolana, Liliana says, usually has <a href=\"https:\/\/familiakitchen.com\/lilianas-venezuelan-arepas\/\">arepas baking in the oven<\/a> and a pot of rice bubbling on her stove\u2014ready to go. We especially love how Liliana, in addition to sauteing her rinsed rice with diced onion, garlic and a bay leaf, drops 3 cloves into the boiling rice liquid, giving her arroz an unexpected hit of Middleastern sabor we aren&#8217;t used to. To that we say: +1.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Of particular interest to this Puerto Rican homecook who <em>only<\/em> uses medium-grain rice (is there even another kind in Boricua cooking?) is Liliana\u2019s call for long grain. So elegant. So exotic. Liliana also reports she alternates between using water and broth (in a 2:1 ratio\u2014liquid to rice, she says) and that the broth can be either chicken or beef for m\u00e1s flavor: +1, again.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Observation: so often it&#8217;s the tiniest shifts in ingredients and techniques that shape how the cocina in one Latino nation differs from its vecinos and neighboring countries and islands. Liliana\u2019s Venezuelan arroz is nothing like <a href=\"https:\/\/familiakitchen.com\/gollitas-essential-mexican-rice\/\">Gollita\u2019s Essential Mexican Rice<\/a> (made with diced peas, carrots, bouillon and <a href=\"https:\/\/familiakitchen.com\/gollitas-essential-mexican-recaudo\/\">her tomato-garlicky sauce: recaudo<\/a>) by one of our favorite Mexican cooks, Gollita Gonz\u00e1lez.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Though, both use long grain. faucet, until the water runs clear. Drain the rice and set aside.<\/li><li id=\"wpzoom-rcb-direction-step-60f6034c06da2\" class=\"direction-step\">Finely chop the onion and garlic.<\/li><li id=\"wpzoom-rcb-direction-step-60f6034c06da3\" class=\"direction-step\">In a heavy pot or pan, heat the olive oil over medium heat. <\/li><li id=\"wpzoom-rcb-direction-step-60f6034c06da4\" class=\"direction-step\">Saute the onion until it is translucent.<\/li><li id=\"wpzoom-rcb-direction-step-16267374452492571\" class=\"direction-step\">Stir in the garlic and let it saute for a minute or two.<\/li><li id=\"wpzoom-rcb-direction-step-16267374452492572\" class=\"direction-step\">Once you begin to smell the garlic\u2019s aroma, stir in the bay leaf and cloves (both will be taken out once the rice is done, before serving).<\/li><li id=\"wpzoom-rcb-direction-step-16267374452492573\" class=\"direction-step\">Add the rinsed rice and saute it with the ingredients already in the hot pan.<\/li><li id=\"wpzoom-rcb-direction-step-16267374452492574\" class=\"direction-step\">Pour in the\u2014<em>make sure it is hot<\/em>\u2014liquid (either water or broth or a combo\u2014your choice!).  Add the salt to the pot. Stir. <\/li><li id=\"wpzoom-rcb-direction-step-16267374452492575\" class=\"direction-step\">Bring the liquid to a boil for about 3 to 5 minutes, until the liquid has reduced a bit, you can see bubbles, and the rice grains are starting to poke through.<\/li><li id=\"wpzoom-rcb-direction-step-16267374452492576\" class=\"direction-step\">Lower heat to its lowest setting and cover the pan. Cook for 15 minutes.<\/li><li id=\"wpzoom-rcb-direction-step-16267374452492577\" class=\"direction-step\">Turn off the heat. Uncover the rice and remove the bay leaf and cloves. Cover again and let the pan sit for 5 to 10 minutes.<\/li><li id=\"wpzoom-rcb-direction-step-16267374452492578\" class=\"direction-step\">It\u2019s ready.
