Cocinas un lado y luego lo volteas una vez, y eso es todo. Aseg\u00farate de servirlo cuando a\u00fan est\u00e9 jugoso. Este corte es conocido por su delicioso sabor porque la carne est\u00e1 muy unida al hueso.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Molleja de coraz\u00f3n<\/strong> o las mollejas son v\u00edsceras en su m\u00e1xima expresi\u00f3n. Son tiernos, grasientos y ricos en grasa. Es importante primero limpiar bien la molleja, quitando las membranas y la grasa. Luego lo hierves antes de ponerlo a la parrilla en una mezcla a partes iguales de leche y agua, con unos granos de pimienta y hojas de laurel. Hervir durante unos 5 minutos. Secarlas muy bien, espolvorear sal y reservar.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Chorizo y morcilla (matrimonio)<\/strong> es el maridaje o maridaje de chorizo de carne y morcilla. El chorizo ideal es el 100% de carne o cerdo. La morcilla m\u00e1s rica a juicio de Cris es la morcilla vasca: morcilla dulce argentina, que lleva pasas y nueces. El chorizo se suele comer con pan de molde y se llama chorip\u00e1n. Aqu\u00ed est\u00e1n sus cuatro mejores:<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Verduras Asadas: Papas al Plomo y Cebollas al Rescoldo<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Verduras. <\/strong>A Cris le encantan las verduras cocinadas a la plancha. Rebanar la berenjena, el calabac\u00edn y el champi\u00f1\u00f3n. Marinarlos en aceite de oliva, ajo, sal, pimienta y piel de lim\u00f3n y dejar reposar durante 15 minutos. Cocine las verduras en una plancha o en una sart\u00e9n de hierro fundido colocada en la parrilla a fuego lento hasta que se vean tiernas y a\u00fan intactas. Primero, lava bien las papas enteras. Deja la piel puesta. Envu\u00e9lvalos en papel de aluminio y cuando est\u00e9n bien cocidos, en unos 30 minutos, \u00e1bralos y roc\u00ede cada uno con aceite de oliva, sal kosher, romero fresco y una pizca de hojuelas de chile.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cebollas al rescoldo o cebollas a la plancha <\/strong>con su piel que se colocan directamente sobre las brasas. Corta la capa superior de cada pimiento rojo, horizontalmente. Retire las semillas y recorte las astillas de la membrana interna. Col\u00f3quelo en la parrilla con el lado abierto hacia abajo para darle un borde crujiente, aproximadamente 5 minutos. Voltee, de modo que el lado abierto quede hacia arriba. Agregue aproximadamente 1\/4 taza de queso provolone rallado y luego rompa un huevo crudo dentro de la pimienta. Espolvorea sal, pimienta, queso parmesano rallado y or\u00e9gano seco sobre el huevo. La porci\u00f3n promedio de carne es entre .8 y 1.25 libras por adulto, dependiendo si el corte tiene huesos o no. Plan de 1 libra por persona.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">2. La parrilla debe estar caliente y limpia antes de agregar la carne.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">3. Calcula el doble de carb\u00f3n que de carne. En otras palabras, por cada 1 libra de carne debe usar 2 libras de carb\u00f3n.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">4. El carb\u00f3n debe instalarse con cuidado. Aseg\u00farese de que no haya manchas negras en las brasas directamente debajo de la parrilla antes de comenzar a cocinar la carne.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">5. La mejor manera de medir el nivel correcto de la temperatura de la parrilla es apuntando con la palma de la mano hacia abajo sobre las brasas. Si no puede soportar la temperatura durante al menos 6 segundos, el calor es demasiado alto o est\u00e1 utilizando demasiado carb\u00f3n.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">6. Recomiendo untar los cortes de carne con una mezcla de aceite de oliva y mantequilla antes de asarlos y mientras los asa. Agregue sal y condimentos a la carne antes de ponerla al fuego.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">8. En Argentina, la carne solo se da vuelta una vez. Comience colocando el hueso o la grasa hacia abajo en la parrilla. Sabr\u00e1 que necesita darle la vuelta cuando toque la parte superior de la carne y se sienta caliente.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">9. Personalmente, me gusta ahumar mis ribeyes con briquetas de madera de manzano que coloco directamente sobre las brasas. El rib eye siempre se debe comer cuando a\u00fan est\u00e1 jugoso.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">11. Los chorizos deben estar cocidos. Por lo general, los corto por la mitad para asarlos a la parrilla, al estilo mariposa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">12.
