Su nombre incluso significa \u201cpeque\u00f1o tomate\u201d.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pero el tomatillo, que es del tama\u00f1o de una lima, no es un hermano de su parecido rojo redondo. M\u00e1s como un primo lejano.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Los tomatillos pertenecen a la familia de las solan\u00e1ceas (junto con las patatas, los pimientos, las berenjenas y, s\u00ed, los tomates. \u00bfYa lo sab\u00edas?). \u00a1No dejes que la parte de las solan\u00e1ceas que suena aterradora en su \u00e1rbol familiar te intimide! Al igual que sus primos vegetales, los tomatillos a\u00f1aden mucho sabor y ampl\u00edan su repertorio culinario latino.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Probablemente est\u00e9 m\u00e1s familiarizado con los tomatillos en la salsa verde que tanto nos gusta de la cocina mexicana y guatemalteca. Este alimento b\u00e1sico de la cocina de estos dos pa\u00edses es una fruta de muchos nombres: tomate de c\u00e1scara mexicano, jamberry, cereza de c\u00e1scara. (Estamos de acuerdo. Llamarlo fruta parece discutible. Al igual que su hom\u00f3nimo, el tomatillo parece m\u00e1s una verdura, pero es fruta).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A diferencia del tomate, el tomatillo es firme y agrio. Su sabor \u00e1cido es mucho m\u00e1s fuerte cuando se come crudo, por lo que se usa con menos frecuencia sin cocinar. Dicho esto, esta acidez puede agregar un toque de bienvenida a una ensalada o frescura a los platos de carne (similar al concepto de rociar una pizca de jugo de lima o lim\u00f3n fresco en un plato).<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">El Primer Tomatillo: Historia de Esta Fruta<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Los tomatillos son nativos de las tierras altas de Guatemala y M\u00e9xico. Los aztecas domesticaron el tomatillo alrededor del a\u00f1o 800 a. C., y la fruta desempe\u00f1\u00f3 un papel clave en la econom\u00eda azteca y maya. Su nombre proviene de la palabra n\u00e1huatl del idioma azteca: \u201ctomatl\u201d. Cargado con vitamina C, vitamina K, niacina, potasio y manganeso, el tomatillo proporcion\u00f3 una nutrici\u00f3n muy necesaria en el M\u00e9xico antiguo y Guatemala.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">El tomatillo se puede comer tanto crudo como cocido. Cuando est\u00e9 listo para usar, primero quite la c\u00e1scara y des\u00e9chelo. Debajo, la fruta tiene una pel\u00edcula pegajosa. Enjuague bien los tomatillos para eliminar la pegajosidad. La c\u00e1scara debe estar seca, dorada y parecida al papel.
