These <a href=\"https:\/\/familiakitchen.com\/es\/all-about-plantains\/\">plantain<\/a> fritters served with a garlicky tomato sauce are crunch-in-your-mouth satisfying, salty-sweet, and addictively delicioso. In Colombia, patacones \u2014 like <a href=\"https:\/\/familiakitchen.com\/how-to-make-tostones\/\">tostones<\/a> in Puerto Rico, Cuba and the D.R. \u2014 are served as a side with just about any meal, or on their own, as a snack any time of day.<\/p>\n\n\n\n<p>Paired with bright-red hogao sauce, patacones are a weekly go-to in the home of <a href=\"https:\/\/familiakitchen.com\/author\/janeth-barrera\/\">Janeth Palacio Barrera<\/a>, a Spanish teacher who grew up in <a href=\"https:\/\/en.wikipedia.org\/wiki\/Medell%C3%ADn\">Medell\u00edn, Colombia<\/a> and now lives with her family in Chicago. Her husband and both kids can\u2019t get enough of them, she reports. The only problem is what kind of plantains to use, she says. Just like she used to help her mom. \u201cStarting when I was a little girl, my mother taught me to make them, to count them, to smash them flat with a small plate.\u201d<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-the-many-delicioso-uses-for-hogao-sauce\">The Many Delicioso Uses for Hogao Sauce<\/h3>\n\n\n\n<p>The sauce made is just as loved as the fritter itself. \u201dIf you don\u2019t have time to make the hogao sauce, sometimes I just put salt,\u201d says Janeth. But, she advises, do make time to simmer a big batch of hogao sauce. She tries to always keep some in her fridge, where it can last up to five days, to add flavor to favorite dishes. \u201dI put it on everything. For example, when I make lentils, I put hogao on them. I make garbanzos and I put hogao on them. I make pasta and use hogao. I put it on soup. On arepas, hogao!\u201d<\/p>\n\n\n\n<p>Hogao is slang for ahogado, which means drowned or smothered. This garlicky tomato salsa adds a touch of dulce that deliciously complements the hot, salty fritters. It\u2019s one of those perfect food marriages\u2014like ketchup on fries.<\/p>\n\n\n\n<p>Serving patacones con hogao is a great way to affordably feed a crowd, adds Janeth. \u201cWe always get together as a family in Colombia, and we like to go around in big groups. My father has seven sisters, and everyone has their own family.\u201d Since no one\u2019s house is large enough to fit everyone, \u201cwe rent a finca, and we go out, all of us: 20 or more people. Whenever we\u2019re there, we know it\u2019s going to be beans, rice and patacones. Because it goes a long way and everyone likes it.\u201d <\/p>\n\n\n\n<p>Delicioso, easy, crowd-pleasing and  affordable, patacones are essential Colombian cuisine. <\/p>\n\n\n\n<p>To try more of id=\"wpzoom-rcb-direction-step-6155e7f1e3a84\" class=\"direction-step\">Remove the tomatoes\u2019 seeds and interior membranes. Dice the tomatoes.<\/li><li id=\"wpzoom-rcb-direction-step-16448579576254152\" class=\"direction-step\">Seed, de-membrane and finely chop the red pepper. <\/li><li id=\"wpzoom-rcb-direction-step-1633020105487346\" class=\"direction-step\">Peel and dice the onion. <\/li><li id=\"wpzoom-rcb-direction-step-1633020105487347\" class=\"direction-step\">In a frying pan, heat the olive oil on medium low. Add the tomatoes, onion, red pepper, scallions, garlic and salt. Simmer for 5 minutes on medium heat. <\/li><li id=\"wpzoom-rcb-direction-step-1633020105487348\" class=\"direction-step\">Lower the heat, cover and simmer for 15 minutes, stirring regularly, to make sure the vegetables don\u2019t stick to the pan.<\/li><li id=\"wpzoom-rcb-direction-step-1633020105487350\" class=\"direction-step\">Uncover, stir and saut\u00e9 for 5 last minutes, uncovered. Taste and adjust the salt, as needed. Add a final drizzle of olive oil.
