Adem\u00e1s, es delicioso, ligero y refrescante, lo que lo convierte en un aperitivo popular en hogares y restaurantes de Estados Unidos y del mundo. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u00a1Gracias, Per\u00fa!<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">El plato es tambi\u00e9n un remolino de misterios. Primero, \u00bfc\u00f3mo llamarlo? La ortograf\u00eda de la comida siempre est\u00e1 sujeta a debate. \u00bfEs ceviche, cebiche, seviche o sebiche? En su p\u00e1gina 901 definitiva <em><a href=\"https:\/\/www.amazon.com\/Gran-Cocina-Latina-Latin-America\/dp\/0393050696\">Gran Cocina Latina: La comida de Am\u00e9rica Latina<\/a><\/em>, publicado en 2012, la acad\u00e9mica y chef Maricel E. Presilla elige usar \u201ccebiche\u201d, aunque reconoce que \u201clos or\u00edgenes del m\u00e9todo de &#039;cocci\u00f3n&#039; o &#039;curado&#039; de este plato, e incluso la etimolog\u00eda del nombre, siguen siendo oscuros. \u201d\u00a0<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">La palabra <em>ceviche<\/em> se ha asociado con el t\u00e9rmino culinario espa\u00f1ol escabeche\u2014digamos <em>escabeche<\/em> varias veces r\u00e1pido y escuchar\u00e1s lo similar que suena a la palabra <em>ceviche<\/em>. El escabeche es un m\u00e9todo para encurtir pescado en ingredientes como vinagre, cebolla, az\u00facar y especias. \u00c9l <a href=\"https:\/\/en.wikipedia.org\/wiki\/Ceviche\">Real Academia Espa\u00f1ola<\/a> se\u00f1ala que la palabra escabeche se deriva del t\u00e9rmino persa medio <em>sikbag<\/em>, refiri\u00e9ndose a la comida que se prepara con vinagre. \u00a1Lo que significa que su nombre puede ser del Medio Oriente! Tambi\u00e9n puede estar relacionado con la palabra quechua <em>siwichi<\/em> para pescado fresco o tierno, seg\u00fan historiador y ge\u00f3grafo peruano <a href=\"https:\/\/es-m-wikipedia-org.translate.goog\/wiki\/Javier_Pulgar_Vidal?_x_tr_sl=es&amp;_x_tr_tl=en&amp;_x_tr_hl=en&amp;_x_tr_pto=nui,sc\">Javier Pulgar Vidal<\/a>. En pocas palabras: no hay una teor\u00eda definitiva.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Aqu\u00ed en Familia Kitchen, usamos la ortograf\u00eda &quot;ceviche&quot;, ya que es el m\u00e1s reconocible en los EE. UU. y aceptado por<a href=\"https:\/\/en.wikipedia.org\/wiki\/Ceviche#Etymology\"> la real academia espa\u00f1ola<\/a>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u00a1A sus ingredientes!<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>La historia del ceviche<\/strong><\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Los platos peruanos como el ceviche reflejan la rica diversidad cultural y la historia de innovaci\u00f3n culinaria del pa\u00eds. Presilla escribe que \u201clos primeros cebiches peruanos se hicieron con el jugo de origen sevillano (amargo), el primer c\u00edtrico que se introdujo en el Nuevo Mundo\u201d. Investigando los or\u00edgenes del plato en ella \u201c<a href=\"https:\/\/pdxscholar.library.pdx.edu\/cgi\/viewcontent.cgi?article=1438&amp;context=honorstheses#:~:text=Over%20time%2C%20Peru's%20cuisine%20evolved,Nikkei%22%20and%20%22Chifa%22\">Comida Peruana: Los Or\u00edgenes Sociales y Culturales de la Comida Peruana<\/a>\u201d, Kari Hatlestad informa que las poblaciones ind\u00edgenas hace 20.000 a\u00f1os subsist\u00edan con ingredientes nativos de la regi\u00f3n, como papas y granos. Grupos de la sierra y la costa comenzaron a comerciar antes del segundo milenio a. C., diversificando su dieta con pescado, chiles, calabazas y m\u00e1s, que contribuyen al plato actual.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Los elementos distintivos del cl\u00e1sico ceviche peruano incluyen pescado blanco, cilantro, jugo de lima, cilantro y cebolla roja. Los colonizadores espa\u00f1oles introdujeron en Per\u00fa nuevos ingredientes y m\u00e9todos de preparaci\u00f3n de alimentos de Espa\u00f1a y \u00c1frica en el siglo XVI. La cocina espa\u00f1ola est\u00e1 influenciada por t\u00e9cnicas e ingredientes de la cocina de Oriente Medio, debido a la invasi\u00f3n musulmana de la pen\u00ednsula ib\u00e9rica en el siglo VIII.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sum\u00e1ndose a las influencias de este plato enga\u00f1osamente simple y las complejidades de la cocina peruana en general, los inmigrantes de China y Jap\u00f3n llegaron a fines del siglo XVIII y principios del XIX con sus propias t\u00e9cnicas y tradiciones culinarias. \u00bfEl resultado? Tres culturas gastron\u00f3micas peruanas separadas y distintas se mezclaron con las t\u00e9cnicas e ingredientes ind\u00edgenas andinos y amaz\u00f3nicos para crear un tr\u00edo de influencias definitorias que se pueden degustar hoy en d\u00eda en el plato peruano: criollo (espa\u00f1ol), nikkei (japon\u00e9s) y chifa (chino).<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>C\u00f3mo se populariz\u00f3 el ceviche en Per\u00fa<\/strong><\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Si bien no sabemos con certeza c\u00f3mo se invent\u00f3 este plato, conocemos muchas historias sobre las posibilidades. De acuerdo a <em>Gran Cocina Latina <\/em>Presilla, Espa\u00f1a, introdujo los naranjos en Per\u00fa en el siglo XVI, pero tambi\u00e9n es posible que ya existieran otros c\u00edtricos, aut\u00f3ctonos de Per\u00fa y responsables de la uni\u00f3n del \u00e1cido y el pescado. <a href=\"https:\/\/en.wikipedia.org\/wiki\/Ceviche\">Otras teor\u00edas<\/a> decir el <a href=\"https:\/\/en.wikipedia.org\/wiki\/Moche_culture\">civilizaci\u00f3n moche<\/a> comenz\u00f3 a comer una versi\u00f3n de ceviche hace casi 2000 a\u00f1os en lo que hoy es Per\u00fa. Otra es que el imperio Inca marinaba el pescado con chicha, una bebida fermentada hecha a base de ma\u00edz. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Algunos historiadores atribuyen la creaci\u00f3n del ceviche a las mujeres moriscas, que llegaron al Per\u00fa desde Granada, Espa\u00f1a, a bordo de los barcos de los colonizadores del siglo XVI. Y no hay duda de que la perdurable popularidad del ceviche estuvo influenciada por la llegada de inmigrantes japoneses durante el siglo XIX como resultado de la <a href=\"https:\/\/en.wikipedia.org\/wiki\/Japanese_Peruvians\">relaciones diplom\u00e1ticas reci\u00e9n formadas<\/a> con Jap\u00f3n Trajeron con ellos preparaciones de larga data y amor por el pescado crudo.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Tambi\u00e9n es posible que todas estas historias de origen sean ciertas y hayan contribuido a crear el ceviche que conocemos y amamos hoy.\u00a0<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Recetas familiares de ceviche que amamos<\/strong><\/h3>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>ceviche peruano<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">La variaci\u00f3n peruana tradicional de este plato se marina durante unas horas y se sirve a temperatura ambiente. Algunos incluso hierven los camarones para hacer el ceviche, empujando los l\u00edmites de lo que se clasifica como ceviche.
