Uno: they are so easy to make. Dos: they\u2019re a festive crowd-pleaser. And tres: they\u2019re traditional and the perfect warmup to an authentic Guatemalan feast. That makes them one of the top snacks in her native Guatemala, says Adriana. <a href=\"https:\/\/en.wikipedia.org\/wiki\/Amatitl%C3%A1n\">Where she grew up in  the southern Guatemalan city of Amatitl\u00e1n,<\/a> people pick up a couple from a street cart or make a quick batch to serve family and guests while you\u2019re in the kitchen getting the rest of the meal ready. &nbsp;<\/p>\n\n\n\n<p>\u201cWe don&#8217;t use the word <em>appetizer<\/em>, but tostadas are considered an appetizer in Guatemala. It&#8217;s what you eat when you&#8217;re waiting for the tamales,\u201d says Adriana, who comes from a family of six brothers and sisters\u2014all great cooks. The seis siblings now live in Illinois, and when they get together for <a href=\"https:\/\/familiakitchen.com\/luis-tamales-from-guatemala\/\">tamales<\/a> and <a href=\"https:\/\/familiakitchen.com\/guatelamalan-fruit-ponche-for-family-gatherings\/\">ponche<\/a> every Christmas holiday\u2014usually at the house of their oldest sister <a href=\"https:\/\/familiakitchen.com\/author\/leny-gonzalez\/\">Marleny \u201dLeny\u201d Gonz\u00e1lez,<\/a> a tremenda cocinera\u2014tostadas are on the menu.<\/p>\n\n\n\n<p>\u201dTostadas are perfect for those days, because everyone gets up and makes their own with whatever toppings and garnishes they like best, while we wait for the big meal,\u201d Adriana says. \u201cI love tostadas.&#8221;<\/p>\n\n\n\n<p>When she makes them, Adriana puts out a tray of each kind and invites family and friends to serve themselves. Pro tip: Tostadas are delicious to serve with <a href=\"https:\/\/familiakitchen.com\/?s=Ceviche\">ceviche<\/a>, she adds. Try it!<\/p>\n\n\n\n<p>The garnishes are muy importante no matter what kind of tostada you make. \u201dThe secret to a good Guatemalan tostada is to top it with your onion, your parsley and your cheese,\u201d says Adriana. \u201dIf you don\u2019t have onion, parsley and cheese, you do not have a tostada.\u201d<\/p>\n\n\n\n<p>Specifically, this means red onion sliced in super-thin rounds, minced fresh parsley, and shredded Guatemalan queso seco\u2014if you can find it, says Adriana. She never can in the U.S., so Mexican queso fresco is the next closest thing, she says. \u201cBut queso seco has a delicious aroma and taste that are different. If you can find it, use it. That makes these tostadas really Guatemalan.&#8221; <\/p>\n\n\n\n<p>The tomato salsa base is s\u00faper simple, says Adriana. You boil tomatoes, onion and a tiny bit of jalape\u00f1o, then pulse them in a blender. All three tostadas get a spoonful of this red sauce, she says.<\/p>\n\n\n\n<p>Another insider tip to make these tostadas the traditional Guatemalan way: Don&#8217;t skimp on the toppings. &#8220;You have to pile on the queso, the parsley and the red salsa,&#8221; says Adriana. It won&#8217;t look neat and pretty\u2014and that is OK. \u201dThis is poor food for hungry people. This is not an Instagram-y dish. This is not avocado toast!\u201d<\/p>\n\n\n\n<p>\u201cThe more rustic and simple these look, the better.
