But in the home of Velia Garc\u00eda of Illinois, no one waits for a Mexican family wedding to make it. The dish is in regular rotation, says Velia. \u201dI cook it all the time, about two times a month. My husband especially loves it.\u201d<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Red chile stew is traditional in many Mexican cities, including <a href=\"https:\/\/en.wikipedia.org\/wiki\/Durango\">Durango<\/a>, in the Sierra Madre foothills of northern Mexico. That\u2019s where Velia grew up and where her parents still live on their ranch. \u201cMy mother taught me to make this asado,\u201d says Velia. \u201dI grew up watching her cook it so often when I was a young girl. And then I started making it myself.\u201d<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Back then, Velia remembers, this dish was cooked over an open fire. Its defining ingredient is <a href=\"https:\/\/en.wikipedia.org\/wiki\/Guajillo_chili\">chile guajillo<\/a>, also called chile guaco in neighboring <a href=\"https:\/\/familiakitchen.com\/destination\/guatemala\/\">Guatemala<\/a>. This deep-red, dried pepper\u2019s flavor is strong but not too spicy. Guajillos score medium-low (2,500 to 5,000) on the Scoville scale, which rates chile heat. \u201dThe cumin and the garlic also give it a great flavor,\u201d says Velia. She buys the pork precut into small chunks, so that each piece is about 1 \u00bd inches long and has both rib meat and bone in each bite. \u201cIt\u2019s so good you want to gnaw on the bone,\u201d she grins. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Serve this asado in a bowl with a spoon and hot tortillas, she says\u2014though many people just pick up the pork and eat it with their hands. If you can\u2019t find the pork pre-sliced at the store, buy the ribs whole. Separate them at home with a sharp knife and cook them the same way, adds Velia. You\u2019ll taste for yourself why this dish is wedding worthy when the meat starts to fall off the  bone and soak in the guajillo and cumin salsa. <\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-why-is-it-called-wedding-stew-or-asado-de-boda\">Why Is It Called Wedding Stew or Asado de Boda?<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">As with so many dishes, the origin of its name is hard to pin down. Some credit Mexican Revolutionary War hero Pancho Villa. The tale goes that one day he and his men arrived at a town called Ejido de Morelos in Zacatecas after winning a battle. He asked the locals to prepare a pork stew with red chiles in honor of their victory. This asado was pulled together and served to the fighters, cementing its rep as a dish worthy of celebrations. (Didn&#8217;t see the part about a wedding, did you? Neither did we. Short answer: No one exactly knows why this dish is called asado de boda.) That said, the chile-rojo stew started showing up at country and small-town weddings, eventually making its way onto the menus of bodas and special gatherings in the big cities. It\u2019s still loved and served at weddings a century later.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Aside from the requisite guajillos and pork, asado de boda recipe ingredients vary across Mexico: from region to region and family to family. Different cuts of pork are used. Some versions call for a mix of red chiles, others include <a href=\"https:\/\/familiakitchen.com\/all-about-the-tomatillo\/\">tomatillos<\/a> or different spices. Velia\u2019s family recipe stands out for its simplicity, short list of ingredients, and addictively authentic sabor. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Velia typically serves this stew with a side of<a href=\"https:\/\/familiakitchen.com\/gollitas-essential-mexican-rice\/\"> Mexican rice<\/a>, <a href=\"https:\/\/familiakitchen.com\/anjies-frijoles-de-olla-mexican-refried-beans\/\">refried beans<\/a>, and <a href=\"https:\/\/familiakitchen.com\/how-to-make-corn-tortillas\/\">homemade corn tortillas<\/a>. class=\"direction-step\">In a separate pan, bring the water to a boil.<\/li><li id=\"wpzoom-rcb-direction-step-628bd0adda3e4\" class=\"direction-step\">Pour the boiling water over the chiles.<\/li><li id=\"wpzoom-rcb-direction-step-1653330410618110\" class=\"direction-step\">Cover the chiles and let them steep for 3 hours.<\/li><li id=\"wpzoom-rcb-direction-step-1653330410618111\" class=\"direction-step\">After 3 hours, scoop out the chiles, which will now be soft and pliable. <\/li><li id=\"wpzoom-rcb-direction-step-1653330410618112\" class=\"direction-step\">Place the chiles and 3 cups of the chile water in your blender.<\/li><li id=\"wpzoom-rcb-direction-step-1653330410618113\" class=\"direction-step\">Add the garlic, cumin and salt to the blender. Pulse until the mixture is fully dissolved.<\/li><li id=\"wpzoom-rcb-direction-step-1653330410618114\" class=\"direction-step\">Strain the red-chile salsa and set aside.<\/li><li id=\"wpzoom-rcb-direction-step-1653330462242346\" class=\"direction-step direction-step-group\"><strong class=\"direction-step-group-title\">Cook the Pork<\/strong><\/li><li id=\"wpzoom-rcb-direction-step-1653330410619116\" class=\"direction-step\">In a large pot on medium heat, warm the oil. <\/li><li id=\"wpzoom-rcb-direction-step-1653330410619117\" class=\"direction-step\">Brown the pork, so that both sides are golden brown.<\/li><li id=\"wpzoom-rcb-direction-step-1653330410619118\" class=\"direction-step\">Cover the pot, lower the heat and slow-cook the pork ribs for about 1 hour.<\/li><li id=\"wpzoom-rcb-direction-step-1653330410619120\" class=\"direction-step\">After 1 hour, lift the lid. With a spoon, scoop out and discard the extra oil at the bottom of the cooked-pork pot. <\/li><li id=\"wpzoom-rcb-direction-step-1653330410619121\" class=\"direction-step\">Add the reserved red-chile salsa. Stir the stew.<\/li><li id=\"wpzoom-rcb-direction-step-1653340087486894\" class=\"direction-step\">Stir in the Mexican oregano. <\/li><li id=\"wpzoom-rcb-direction-step-1653330410619122\" class=\"direction-step\">Taste for salt and adjust as needed.<\/li><li id=\"wpzoom-rcb-direction-step-1653330410619123\" class=\"direction-step\">Cook on medium low for 20 minutes, uncovered.<\/li><li id=\"wpzoom-rcb-direction-step-1653330410619124\" class=\"direction-step\">It\u2019s ready.
