For half a century, this abuela has lived in Massachusetts. But whenever she travels to her hometown of <a href=\"https:\/\/en.wikipedia.org\/wiki\/Cochabamba\">Cochabamba<\/a>, Rita makes sure to load up on this protein-rich staple in her favorite traditional Bolivian meals, including this recipe. <\/p>\n\n\n\n<p>That&#8217;s not too hard, thankfully. In Bolivia, aji de quinua, as this dish is called, is on the menu seemingly everywhere\u2014at the homes of the friends and family members she visits and and in her Andes valley hometown&#8217;s many excellent restaurants, Rita says.<\/p>\n\n\n\n<p>The word <em><a href=\"https:\/\/en.wikipedia.org\/wiki\/Quinoa\">quinoa<\/a><\/em> comes from the Quechua <em>kinwa<\/em> or <em>kinuwa<\/em>, the Indigenous name of the seed that flowers from the amaranth family plants that thrive in the Andes regions of Bolivia and Peru. The Incas considered this nourishing ingredient sacred, calling it <a href=\"https:\/\/lasaweb.org\/en\/\">mother grain<\/a>. When the Spaniards arrived in Bolivia, they were surprised to see the locals cultivating and eating this strange seed. The Spanish soon replaced it with their go-to grain: wheat, though quinoa remained a staple of the Indigenous community. In the past decades, quinoa has come into its own as a healthy superfood, and its popularity (and price) have exploded. <\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-quinoa-a-beloved-bolivian-staple\">Quinoa: A Beloved Bolivian Staple <\/h2>\n\n\n\n<p>Back home in Bolivia, quinoa is the opposite of trendy. Locals have been eating quinoa since ancient times, says Rita. \u201dIt is so popular in our cuisine.\u201d  The quinoa grains must first be rinsed in cold water, to wash away any residue <a href=\"https:\/\/en.wikipedia.org\/wiki\/Saponin\">saponin<\/a>, which can give it a bitter taste. After the seeds cook in a 1:1 ratio with water for 15 minutes, this recipe calls for the quinoa to be mixed with the saut\u00e9ed onions, tomatoes, colorado or red aji pepper, and garlic. Chopped boiled potatoes and charque or dried beef jerky, a common ingredient in Bolivia, are then added. <\/p>\n\n\n\n<p>Thank you, Rita, for sending Familia Kitchen this family recipe. a saucepan.<\/li><li id=\"wpzoom-rcb-direction-step-63251b8e376f7\" class=\"direction-step\">In a bowl, pour the boiling water. Add the dried red aji peppers.<\/li><li id=\"wpzoom-rcb-direction-step-63251b8e376f8\" class=\"direction-step\">Steep the ajies or peppers for 15 minutes. <\/li><li id=\"wpzoom-rcb-direction-step-166337644379875\" class=\"direction-step\">When ready, strain the peppers. Remove stems and seeds. Chop into small pieces and set aside<\/li><li id=\"wpzoom-rcb-direction-step-1663376510432130\" class=\"direction-step direction-step-group\"><strong class=\"direction-step-group-title\">Prep the Charque or Beef Jerky<\/strong><\/li><li id=\"wpzoom-rcb-direction-step-166337644379879\" class=\"direction-step\">Bring 2 to 3 cups of water to a boil in a saucepan.<\/li><li id=\"wpzoom-rcb-direction-step-166337644379880\" class=\"direction-step\">When the water boils, add the charque or beef jerky. Simmer for 15 minutes.<\/li><li id=\"wpzoom-rcb-direction-step-166337644379882\" class=\"direction-step\">Strain the charque and saut\u00e9 in oil on the stovetop.<\/li><li id=\"wpzoom-rcb-direction-step-166337644379984\" class=\"direction-step\">Press the cooked charque or beef jerky with a batan (a Bolivian traditional press) or rolling pin, large can, or something heavy. Gently press and shred the jerky into soft, pliable, small pieces. Set aside.<\/li><li id=\"wpzoom-rcb-direction-step-1663376522907147\" class=\"direction-step direction-step-group\"><strong class=\"direction-step-group-title\">Boil the Potatoes<\/strong><\/li><li id=\"wpzoom-rcb-direction-step-166337644379986\" class=\"direction-step\">Bring a pot of water to a boil. Peel the potatoes.<\/li><li id=\"wpzoom-rcb-direction-step-166337644379988\" class=\"direction-step\">When the water starts to boil, add the potatoes and boil until cooked through, yet firm. <\/li><li id=\"wpzoom-rcb-direction-step-166337644379989\" class=\"direction-step\">When ready, strain and set aside. When the potatoes are cool, dice them. <\/li><li id=\"wpzoom-rcb-direction-step-1663376541825164\" class=\"direction-step direction-step-group\"><strong class=\"direction-step-group-title\">Make the Quinoa<\/strong><\/li><li id=\"wpzoom-rcb-direction-step-166337644379992\" class=\"direction-step\">In a colander, rinse the quinoa grains 3 times with fresh, cold tap water. <\/li><li id=\"wpzoom-rcb-direction-step-166337644380093\" class=\"direction-step\">Bring 2 cups of water to a boil (without salt) in a large pot.<\/li><li id=\"wpzoom-rcb-direction-step-166337644380094\" class=\"direction-step\">When the water boils, add the rinsed quinoa. <\/li><li id=\"wpzoom-rcb-direction-step-166337644380095\" class=\"direction-step\">Cover and lower the heat to simmer. Cook the quinoa for 15 minutes.<\/li><li id=\"wpzoom-rcb-direction-step-1663376554739181\" class=\"direction-step direction-step-group\"><strong class=\"direction-step-group-title\">Putting It All Together<\/strong><\/li><li id=\"wpzoom-rcb-direction-step-166337644380098\" class=\"direction-step\">In a wide skillet on the stovetop, warm the olive oil on low heat.<\/li><li id=\"wpzoom-rcb-direction-step-166337644380099\" class=\"direction-step\">Add the finely chopped onions, tomatoes and red aji peppers; freshly pressed garlic; and salt. <\/li><li id=\"wpzoom-rcb-direction-step-1663376443800100\" class=\"direction-step\">Saut\u00e9 for about 5 to 7 minutes, until the onions turn translucent and the tomatoes are cooked.<\/li><li id=\"wpzoom-rcb-direction-step-1663376443800101\" class=\"direction-step\">Add the onions and tomatoes to the pot with the quinoa. <\/li><li id=\"wpzoom-rcb-direction-step-1663376443800102\" class=\"direction-step\">Fold in the diced, boiled potatoes and shredded charque or beef jerky.<\/li><li id=\"wpzoom-rcb-direction-step-1663376443800103\" class=\"direction-step\">Warm over low heat for a few minutes until the quinoa mixture heats throughout, uniformly.<\/li><li id=\"wpzoom-rcb-direction-step-1663376443800104\" class=\"direction-step\">Gently mix it all together one last time.
