Pero, \u00bfqu\u00e9 tipo de ma\u00edz molido es el adecuado y cu\u00e1ndo? Porque tu elecci\u00f3n de harina de ma\u00edz <em>hace<\/em> asunto. Este proceso, descubierto por primera vez por los mesoamericanos hace m\u00e1s de 7.000 a\u00f1os, le da al ma\u00edz un sabor ligeramente a nuez y m\u00e1s sabroso que la harina de ma\u00edz sin procesar, y permite amasarlo para hacer masa para tortillas y tamales.<\/figcaption><\/figure>\n<\/div>\n\n\n<h3 class=\"wp-block-heading\" id=\"masaharina\"><strong>\u00bfQu\u00e9 es Masa Harina?<\/strong><\/h3>\n\n\n\n<p class=\"wp-block-paragraph\" id=\"nixtamalization\">La harina de ma\u00edz m\u00e1s popular en la cocina mexicana es la masa harina. Esta harina se elabora a partir de ma\u00edz de campo seco y finamente molido que ha pasado por un proceso llamado <strong>nixtamalizaci\u00f3n<\/strong>. Esto fue descubierto por los mesoamericanos, quienes idearon una manera ingeniosa de tratar qu\u00edmicamente los granos de ma\u00edz en una soluci\u00f3n alcalina, usando lej\u00eda o hidr\u00f3xido de calcio. \u00bfC\u00f3mo consiguieron la lej\u00eda? De las cenizas de los fuegos de le\u00f1a o de las part\u00edculas de polvo de las rocas calizas, que utilizaban para cocinar y raspar las mazorcas de ma\u00edz. Los antiguos fueron los primeros en darse cuenta de que la nixtamalizaci\u00f3n ayuda a nuestro cuerpo a absorber la niacina esencial (vitamina B3) que se encuentra naturalmente en el ma\u00edz. Tambi\u00e9n es una forma de conservar el ma\u00edz para evitar que brote cuando se almacena. El t\u00e9rmino proviene de dos aztecas. <a href=\"https:\/\/en.wikipedia.org\/wiki\/Nahuatl\">n\u00e1huatl<\/a> palabras: <em>siguienteli<\/em> para \u201ccenizas de cal\u201d y <em>tamalli<\/em> para \u201cmasa de ma\u00edz sin formar\/cocida\u201d, de donde obtenemos: tamal.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">As\u00ed es como funciona la nixtamalizaci\u00f3n: el ma\u00edz se hierve en agua con hidr\u00f3xido de calcio. Esto suaviza su casco exterior resistente y fibroso para facilitar su extracci\u00f3n. Luego, los granos se hinchan hasta duplicar su tama\u00f1o. A continuaci\u00f3n, se enjuaga el \u201cma\u00edz gigante\u201d para quitarle lo alcalino, as\u00ed como la c\u00e1scara exterior de los granos y el germen interior, que es la parte reproductiva de la planta del ma\u00edz. lo que queda se llama <a href=\"https:\/\/familiakitchen.com\/es\/all-about-hominy\/\">ma\u00edz molido<\/a>. Prepararla es tan sencillo como agregar agua tibia (aproximadamente 1\u00bd tazas por 2 tazas de masa), y en unos minutos la masa estar\u00e1 lista para amasar y darle forma.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">La harina de ma\u00edz y la harina de ma\u00edz no son lo mismo que la masa harina porque no han sido nixtamalizadas. Las siglas significan Producto Alimenticio Nacional, que significa Producto Alimenticio Nacional, ya que esta harina de ma\u00edz precocida fue creada especialmente en el <a href=\"https:\/\/en.wikipedia.org\/wiki\/Harina_P.A.N.\">d\u00e9cada de 1950<\/a> para el consumo masivo venezolano y sigue siendo un ingrediente de afirmaci\u00f3n de identidad para los venezolanos. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Consejo profesional: Definitivamente no cambies masa arepa por masa harina, ya que la harina de ma\u00edz precocida es <strong>no<\/strong> nixtamalizado. Sabr\u00e1 y se cocinar\u00e1 de manera diferente.
