My mother, Lisa, grew up with a world of flavors in Panama, and this traditional dish reflects that variety: it has saz\u00f3n, a habanero chile, spaghetti, paprika, soy sauce and Worcestershire sauce. She proudly describes the cultural magnitude of her native Panama by saying, \u201cOne country divided, the world united.\u201d This motto stems from the presence of Panama Canal, which brings so many global cultures to the nation.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">When my mom came to the States, she brought this rich stew of culture with her, though her love of cooking. For more of my mom\u2019s cooking, try her amazing <a href=\"https:\/\/familiakitchen.com\/lisas-beef-empanadas-from-panama\/\">Beef Empanadas From Panama<\/a>, submitted by my sister, Mary-Elizabeth.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pollo guisado translates to stewed chicken. Although my mom likes her stew served with rice as the carb, her mother and grandmother preferred it with spaghetti-style pasta. I also remember an instance of food \u201ccode-switching\u201d when I first learned that spaghetti pasta is typically used for American-Italian spaghetti in the United States.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">For this recipe, Mom and I followed Abuelita\u2019s preferences and used pasta. For the chicken, my mom\u2019s approach is to use chicken on the bone since it has more flavor. But if you are unaware of how to properly clean and cut chicken (like me), you can also buy pre-cut, boneless chicken breast, which also works.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">One fall Sunday during this pandemic, my mom and I made this dish together over FaceTime. We did everything across two screens in each of our homes: from heating our pan, cutting the vegetables and cleaning the kitchen while the stew simmered. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">FaceTiming with Mom and making this comforting dish together was a fun way to connect with her even though we don\u2019t live near each other. class=\"recipe-card-directions\">\n\t\t\t<h3 class=\"directions-title\">Directions<\/h3>\n\t\t\t<ul class=\"directions-list\"><li id=\"wpzoom-rcb-direction-step-5fdc0ee92fc24\" class=\"direction-step\">Prepare the chicken: Mix the chicken with the marinade ingredients. Set aside in a bowl and let the chicken marinate for one hour.<\/li><li id=\"wpzoom-rcb-direction-step-46ff85898fd94\" class=\"direction-step\">While the chicken marinates, dice the onion, celery, garlic and aj\u00edes dulces.<\/li><li id=\"wpzoom-rcb-direction-step-d12a492f12359\" class=\"direction-step\">When the marinated chicken is ready, heat a shallow pan to medium heat and add the grapeseed oil. Add the chicken and pan-fry. When the chicken is golden brown on each side, set aside in a glass baking dish.<\/li><li id=\"wpzoom-rcb-direction-step-b14bea46e50cb\" class=\"direction-step\">In the same shallow pan where you cooked the chicken, add the diced onion and celery. Add a smidge more oil, if needed.<\/li><li id=\"wpzoom-rcb-direction-step-a240b6d8300c3\" class=\"direction-step\">Saute the onion and celery for 5 to 7 minutes at medium to medium-high heat until softened. <\/li><li id=\"wpzoom-rcb-direction-step-747b6b0d9538d\" class=\"direction-step\">Now add the garlic and aj\u00edes dulces and saute. Once you can smell the aroma of garlic and aj\u00edes dulces, add the tomato paste. Let the tomato paste cook until it browns.<\/li><li id=\"wpzoom-rcb-direction-step-222784d18f755\" class=\"direction-step\">Once the paste is browned, add the chicken, tomato sauce, saz\u00f3n packet and water. (The amount of water should equal the amount of tomato sauce used.)<\/li><li id=\"wpzoom-rcb-direction-step-8512b8d2cb0af\" class=\"direction-step\">Add the olives, bay leaves, oregano, paprika, turmeric and the whole habanero to the sauce.
