You say you&#8217;ve never tried it? Do you love lasagna? Do you love <a href=\"https:\/\/familiakitchen.com\/all-about-plantains\/\">plantains<\/a>? Then you love pastel\u00f3n!\u201d says <a href=\"https:\/\/familiakitchen.com\/author\/michelle-ezratty-murphy\/\">Michelle Ezratty Murphy<\/a>, one of our favorite homecooks at Familia Kitchen. She grew up in Puerto Rico, married a local guy, and is an experta in making the island\u2019s traditional dishes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\" id=\"E-1072\">\u201dI call this dish lasagna\u2019s cousin. Sofrito is the magic cooking base that makes every Boricua dish taste Puerto Rican. Just about family has their own sofrito recipe. Here at Familia Kitchen, we alternate between using <a href=\"https:\/\/familiakitchen.com\/dona-felipa-how-to-make-puerto-rican-sofrito\/\">this recipe by our Puerto Rican neighbor in Chicago, Do\u00f1a Felipa,<\/a> this <a href=\"https:\/\/familiakitchen.com\/cocina-criolla-sofrito\/\">classic sofrito recipe<\/a> from Puerto Rican cookbook reina Carmen Aboy Valldejuli, and <a href=\"https:\/\/familiakitchen.com\/my-essential-puerto-rican-sofrito\/\">Michelle\u2019s family-famous sofrito<\/a>.  We follow her advice to make it ahead: \u201cI like to blend up big batches of sofrito on a Saturday, pop it into ice trays, and stock bags full of tiny sofrito cubes in my freezer for future use,\u201d says Michelle.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\" id=\"E-2767\">The very act of making pastel\u00f3n is something to celebrate with family and friends.
