“Marta is an incredible cook and can throw down with homemade sauces and pasta, and especially with sweets,” says Melissa Aguilera Rober of New York. Melissa is married to Marta’s nephew, who is equally family famous for his Argentinian asados and a fan of his Tia Marta’s chimichurri, of course. Whenever Alex and their family goes back to visit family in Argentina, a highlight of their trip is spending time with Marta. She lives in San Isidro, a neighborhood in Buenos Aires.

Plus, this chimi has so many uses, reports Melissa. “Marta says that although this is typically known as a topping for meat, it is also delicious as a dressing for salads and pizza. If you mix it with a little mayonnaise, it can even make a great dip or spread.”

Ingredients

  • 1/2 head garlic, about 5 to 6 cloves, minced

  • 1 bunch parsley, finely chopped

  • 1/2 cup corn oil

  • 1/2 cup white vinegar

  • 1 to 2 Tbsp crushed red pepper, to your taste

  • 1/2 tsp salt, to taste

  • 1/8 tsp pepper, to taste

Directions

  • Peel and finely mince a half a head of garlic, about 5 to 6 garlic cloves.
  • Finely chop the parsley leaves into tiny pieces.
  • Mix all the ingredients together and serve on your favorite meats at your next Argentinian asado or grill gathering.
