How to Make Arroz con Coco: Colombia’s Sweet Rice Side

Arroz con coco or Colombian rice with coconut milk is our favorite way to add a touch of dulce to dinnertime.

Thank you to one of our favorite Latino food homecooks, Michelle Ezratty Murphy, who shows us how she makes this classic Colombian side. Watch as boils down the coconut milk until it forms a creamy paste. What happens next is almost magical, says Michelle. The coconut paste completely soaks into the rice, giving the grains a soft-brown color and so much sabor. She then stirs in brown sugar and raisins, and the result is sweetness itself: A dulce rice dish that will leave you craving more long time after you get up from the table.
